Instructions
Heat 1 tbsp of vegetable oil in a large pan or wok over medium heat. Add the beaten eggs and cook, stirring occasionally, until scrambled.
In the same pan, add another tablespoon of oil and sauté the diced onion for 2-3 minutes, until softened. Add the frozen peas and carrots and cook for another 2-3 minutes, stirring occasionally.
Break up any clumps in the cold rice and add it to the pan. Stir everything together to combine.
Pour in the soy sauce and optional sesame oil. Stir to evenly coat the rice and veggies. Add salt and pepper as needed.
Return the scrambled eggs to the pan, along with any cooked protein you’re using (like chicken, shrimp, or tofu). Stir everything together to combine.
Top with chopped green onions and give it a final toss. Enjoy!.
