Vegan Cauliflower Steaks

Ingredients
1 large head of cauliflower
2-3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp ground cumin
Salt & pepper to taste
Optional: lemon juice, fresh herbs (like parsley or cilantro), tahini sauce or chimichurri for serving
Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Remove the outer leaves from the cauliflower and trim the base, keeping the core intact.
Slice the cauliflower into ¾ to 1-inch thick steaks— you’ll get about 2–3 good ones from the center.
Mix olive oil with garlic powder, paprika, cumin, salt, and pepper, then brush both sides of the steaks with the mixture.
Roast for 20–25 minutes, flipping halfway, until golden brown and tender with crispy edges. Serve.
