Apple Cider Doughnuts

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups apple cider
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 tbsp unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Simmer 1 1/2 cups apple cider in a small pot over medium heat until it reduces to 1/2 cup (about 20–25 minutes), then set aside to cool.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In a separate bowl, cream the butter and sugars until light and fluffy, then beat in the egg, cooled cider, buttermilk, and vanilla.
  4. Combine the wet and dry ingredients to form a soft, sticky dough, then refrigerate until firm enough to handle.
  5. Roll the dough out on a floured surface, cut into doughnut shapes, and fry in hot oil until golden brown on both sides.
  6. While still warm, brush the doughnuts with melted butter and toss in a cinnamon-sugar mixture to coat.
