Apple Cider Doughnuts

Ingredients
2 cups all-purpose flour
1 1/2 cups apple cider
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
2 tbsp unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1/2 cup buttermilk
1 tsp vanilla extract
Instructions
Simmer 1 1/2 cups apple cider in a small pot over medium heat until it reduces to 1/2 cup (about 20–25 minutes), then set aside to cool.
In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
In a separate bowl, cream the butter and sugars until light and fluffy, then beat in the egg, cooled cider, buttermilk, and vanilla.
Combine the wet and dry ingredients to form a soft, sticky dough, then refrigerate until firm enough to handle.
Roll the dough out on a floured surface, cut into doughnut shapes, and fry in hot oil until golden brown on both sides.
While still warm, brush the doughnuts with melted butter and toss in a cinnamon-sugar mixture to coat.
