Ingredients
1 medium butternut squash
1 medium onion, chopped
2-3 cloves garlic, minced
1 tbsp olive oil or butter
4 cups of vegetable or chicken broth (gluten free)
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
Instructions
In a large pot, heat oil/butter. Add onion and garlic. Cook 3–5 mins until soft.
Toss in cubed squash. Stir for a minute.
Pour in broth. Bring to a boil, then lower heat and simmer 20–25 mins until squash is very soft.
Use an immersion blender (or transfer to a blender in batches) until smooth.5. Stir in salt, pepper, and any optional spices or cream. Heat through.
Garnish with herbs, seeds, or a swirl of cream if you’re feeling fancy.
