Squash Soup

Ingredients

  • 1 medium butternut squash
  • 1 medium onion, chopped
  • 2-3 cloves garlic, minced
  • 1 tbsp olive oil or butter
  • 4 cups of vegetable or chicken broth (gluten free)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. In a large pot, heat oil/butter. Add onion and garlic. Cook 3–5 mins until soft.
  2. Toss in cubed squash. Stir for a minute.
  3. Pour in broth. Bring to a boil, then lower heat and simmer 20–25 mins until squash is very soft.
  4. Use an immersion blender (or transfer to a blender in batches) until smooth.5. Stir in salt, pepper, and any optional spices or cream. Heat through.
  5. Garnish with herbs, seeds, or a swirl of cream if you’re feeling fancy.
