Gluten-Free Pancakes

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg2 tbsp melting butter or oil
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a bowl, whisk flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, egg, melted butter/oil, and vanilla.
  3. Pour wet into dry and mix just until combined (lumps are fine). Let it sit 5–10 mins.
  4. Heat a greased skillet on medium. Pour 1/4 cup batter per pancake. Cook until bubbles form, then flip and cook another 1–2 mins.
  5. Top with syrup, fruit, or whatever you love.
