Gluten-Free Bread

Ingredients

  • 2 1/2 cups gluten-free all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 2 tbsp sugar/honey
  • 1 cup warm water (about 110°F / 43°C)
  • 2 eggs
  • 2 tbsp olive oil

Instructions

  1. Mix warm water, sugar/honey, and yeast. Let sit 5–10 mins until foamy.
  2. In a large bowl, whisk eggs and oil.
  3. Add yeast mixture to wet ingredients. Add flour and salt. Mix well (dough will look like thick batter)
  4. Pour into greased 9x5 loaf pan. Smooth top. Cover and let rise 30–45 mins.
  5. Bake at 375°F (190°C) for 35–40 mins, until golden and hollow-sounding when tapped.
  6. Let cool in pan 10 mins, then move to rack. Cool completely before slicing.
