Gluten-Free Cookies

Ingredients

  • 1 1/4 cups almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the almond flour, baking soda, and salt.
  3. In a separate bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
  4. Mix in the egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Then, fold in the chocolate chips.
  6. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
