Chili

Ingredients

  • 2 lbs ground beef (or ground turkey)
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 clovese garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14 oz) diced tomatoes (fire-roasted, if possible)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15oz) black beans, drained and rinsed
  • 1 can (4 oz) green chillies, diced (optional)
  • 2 tbsp tomato paste
  • 1 cup of beef broth (or vegetable broth)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp oregano (dried)
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1 tsp red pepper flakes (optional, for extra heat)
  • 1 tbsp olive oil, or vegetable oil
  • Toppings (optional): Sour cream, shredded cheese, green onions, cilantro, sliced jalapeños, tortilla chips, or avocado

Instructions

  1. In a large pot, heat 1 tbsp olive oil over medium heat. Add 2 lbs ground beef and cook until browned. Drain excess fat if needed.
  2. Add 1 chopped onion, 1 chopped green bell pepper, and 3 minced garlic cloves to the beef. Cook for about 5 minutes until the vegetables soften.
  3. Stir in 2 tbsp tomato paste, 1 can diced tomatoes, 1 can tomato sauce, and 1 cup beef broth. Add 2 tbsp chili powder, 1 tbsp cumin, 1 tbsp smoked paprika, 1 tsp ground coriander, 1 tsp oregano, 1 tsp salt, and 1/2 tsp black pepper. Stir everything together.
  4. Add 1 can kidney beans, 1 can black beans, and 1 can green chilies (optional). Mix everything well.
  5. Bring the chili to a simmer, then reduce the heat to low. Let it simmer uncovered for 30-45 minutes, stirring occasionally.
  6. Adjust the seasoning if needed with extra salt, pepper, or chili powder. Then, serve the chili with your favorite toppings like sour cream, shredded cheese, green onions, or avocado.
